Place the eggs and sugar into a bowl and beat with a hand mixer until it turns white and thickens. Add in the bananas and beat some more.
Add in the okara and cocoa in that order and quickly mix it together. Use a rubber spatula and mix after each ingredient is added. (This is the time to add in toppings.)
Drop into the pan, and bake at 170°C for 45 minutes.
This is made with cracked walnuts and minced dried mango.
