Step:

  1. Preheat the oven to gas 4 / 180C / 350F and line 2 cookie sheets with parchment paper

  2. Combine the melted sunflower spread, sugars, milk and vanilla

  3. Stir in the flour, xanthan gum if using, bicarb, baking powder and salt until a dough begins to form, then knead in the chocolate chips

  4. Drop slightly rounded tablespoonfuls of the dough 2 inches apart onto ungreased cookie sheets and bake for 11 - 14 minutes or until the cookie edges are light brown and the tops look set

  5. Let cool for 1 minute on the cookie sheets before transferring to a wire rack to cool completely

  6. Store in an airtight container. Recipe makes around 40 cookies


Ingredients

  1. 160 ml (2/3 cup) melted dairy-free spread/butter
  2. 150 grams (2/3 cup) granulated sugar
  3. 135 grams (2/3 cup) packed) brown sugar
  4. 120 ml (1/2 cup) light coconut milk
  5. 2 tsp vanilla extract
  6. 300 g (2.5 cups) gluten-free / plain flour
  7. 1/4 tsp xanthan gum if using GF flour
  8. 1 tsp bicarb / baking soda
  9. 1 tsp baking powder
  10. 1/2 tsp salt
  11. 280 g (1.5 cups) chocolate chips - I use Plamil vegan brand
