Step:

  1. Dice the potatoes and boil in salted water for 10 minutes until tender, then drain and pat dry

  2. Simmer the peas in another pan for 5 minutes or until cooked

  3. While the peas and potatoes are still warm, mix them together gently in a bowl with the chopped beets, onion and parsley

  4. Fold in the mayo or salad dressing and season to taste
