Step:
cut the chorizo into small cubes or strips.
boil the potatoes ,steam or microwave them until tender but still firm .drain and cool,
add potatoes,chorizo,tomatoes,garlic and nuts in bowl.,season to taste
make mayonnaise, beat yolks and juice until smooth, gradually work 1/4 of oil in beating all the time,.pour in remaining oil in a steady stream beating all the time. add basil ,pour over salad mix in well

100 grams finely chopped , cured chorizo
1 and a half kg baby new potatoes cut into large chunks
70 grams or 2/3 of a cup drained sun-dried tomatoes ,sliced
2 tbsp chopped pistachio nuts
2 clove garlic.,chopped
1 good.pinch each salt and pepper
dressing
3 egg yolk
2 tbsp lemon juice
3/4 cup olive or vegetable oil
1 small handful of fresh shredded basil
