Step:

  1. Place walnuts in a medium bowl and fill with enough water to cover by 1 inch.

  2. Cover and set aside.

  3. Soak at room temperature at least 1 hour or up to 12 hours for easy blending.

  4. Drain walnuts; rinse thoroughly.

  5. In a blender combine walnuts, 3 cups water, honey, vanilla, and salt; blend on low until very smooth, at least 2 minutes.

  6. Serve immediately or store in the refrigerator for up to 5 days.

  7. * For a smoother milk, strain with a cheesecloth. *

  2. 1 tbsp honey or agave nectar
  3. 1 tsp pure vanilla extract (I add a bit extra)
