melt.the butter with the oil ,gently saute the onions and garlic until soft ,add salt and pepper
add the flour ,stirring for about five minutes so it not sets to bottom.
add a little milk at a time until it reaches thickness you prefer carry on stirring
add a teaspoon.of powdered vegetable stock from a jar,stir.
serve with meats or with bread .
If,you double the amound.and blend until smooth, this makes a great soup too.
garnish with chives or.spring onion
