Pour water into a 2 quart saucepan and bring to a boil over high heat.
Stir in the couscous.
Remove the pan from the heat and cover it.
Let the couscous sit for 5 minutes.
Fluff with a fork.
Stir in the parsley, lemon juice, lemon zest, and enough olive oil to moisten the mixture (start with 1 tablespoon).
