Place extra virgin olive oil and the garlic, lemon juice, and olives in a food processor or blender until well blended.
Or, you can use a fork to mash everything in a small bowl until they become a paste.
Taste for seasoning.
Add salt and pepper to taste, and more lemon juice as necessary.
*This recipe goes great on the side of roasted broccoli or cauliflower.*
**This recipe makes about 1/3 cup.**
***Any kind of black olives cured with herbs will also work for this recipe.***
****You can also add 1/4 teaspoon of dried oregano or thyme to the vinaigrette or 1/2 teaspoon of fresh.****
