Step:

  1. In a saucepan, place rice mix, contents of seasoning packet and water as directed on the package.

  2. Bring to a boil.

  3. Add carrots.

  4. Reduce heat.

  5. Cover and simmer for 30 minutes or until rice is tender and water is absorbed.

  6. Meanwhile, in a skillet, sauté squash, peppers and onion in oil until crisp tender.

  7. Stir into rice mixture.

  8. *This recipe makes about 4 servings.*


Ingredients

  1. 2 tbsp vegetable oil
  2. 1/4 cup chopped onion
  3. 2/3 cup chopped green pepper
  4. 1 cup diced yellow summer squash
  5. 2 medium carrots, cut into 1/4 inch slices
  6. 2/3 cup chopped sweet red pepper
  7. 1 packages (6 ounces) long grain and wild rice mix
