3 cup nuts (such as walnuts, almonds, cashews, pecans, pepitas, shelled pistachios)
1 tbsp cinnamon (I use Ceylon, China, or Vietnamese)
2 lb (9 cups) regular old fashioned oats
1 tsp nutmeg (you can also use mace instead if you prefer)
2/3 cup brown sugar
5 tbsp butter
2 to 3 cups dried fruit (craisins, cherries, strawberries, raisins, blueberries, mango, pineapple, chopped apricots, raspberries, etc)
1 tbsp vanilla extract (I use extra)
1 cup honey (I use clover or wildflower)
